Mashed Potatoes with a Flair
Fried potatoes, mashed potatoes, cooked potatoes... It seems as if there are potatoes at every meal over Passover. Here is a way to add some color to your mashed potatoes, as well as a delicious combination of flavors.
- Press the mashed potatoes into a square or round dish. Flip onto a plate.
- Divide the potatoes into four even rows and then fill each section with a different topping.
- fresh sliced mushrooms, sauteed
- diced red pepper sauteed
- fresh or frozen spinach leaves sauteed
- onions, sauteed
