Mashed Potatoes with a Flair


 

Fried potatoes, mashed potatoes, cooked potatoes... It seems as if there are potatoes at every meal over Passover.  Here is a way to add some color to your mashed potatoes, as well as a delicious combination of flavors.  

Directions:

  1. Press the mashed potatoes into a square or round dish. Flip onto a plate.
  2. Divide the potatoes into four even rows and then fill each section with a different topping.

Suggested Toppings:

  • fresh sliced mushrooms, sauteed
  • diced red pepper sauteed
  • fresh or frozen spinach leaves sauteed
  • onions, sauteed
