Pomegranate and Apple Salad with Creamy Parmesan and a review and giveaway of Dairy Made Easy

Mmm....Milchigs.  Dairy conjures up images of cheesy penne a-la-vodka, heavenly eggplant parmesan and luscious cheesecakes all served...at a restaurant.

If you're like most people, home cooked dairy is limited to baked ziti served with shredded cheese and jarred pasta sauce, homemade pizza and delicious hot cocoa made from a mix.

I have good news for you. Gourmet dairy at home is no longer out of your reach. Leah Schapira  and VIctoria Dwek have done it again with their latest release "Dairy Made Easy".  The pictures are a feast for the eyes, so you can image how delicious it must taste once you are actually eating it!

Chock full of tidbits and tips they guide you to understand the different cheese options, how to use heavy cream and the art of making paninis.  They've once again kept to their word and made dairy easy!  Follow their simple instructions and you're sure to create a meal that's on par with your favorite dairy restaurant.

The Daskal's Cheesecake recipe caught my eye.  It looks delicious and easy to make.  You can be sure it's going to be the first thing put on my shavout menu.  Speaking of menus, don't make yours until you check this cookbook out.  It's sure to give you some great ideas that you've never even thought of!

Here's a great one to get you started!

Pomegranate & Apple Salad with Creamy Parmesan

4 servings
  • 1   head Romaine lettuce, chopped
  • 1  apple, diced or sliced
  • seeds of ½ pomegranate
  • 1  grapefruit, supremed
  • 2 Tbsp   finely diced red onion
  • ¼ cup   light mayonnaise
  • 2 Tbsp   apple cider vinegar
  • 1 Tbsp   water
  • 1 tsp   sugar
  • 1 tsp   kosher salt
  • pinch coarse black pepper
  • 2 Tbsp   grated Parmesan cheese

    In a large bowl, combine lettuce, apple, pomegranate seeds, grapefruit, and red onion. Prepare the dressing: In a small bowl, whisk together mayonnaise, vinegar, water, sugar, salt, pepper, and Parmesan cheese. Toss dressing with salad.
