Ingredients

fresh white mushrooms
1
red pepper, cut into large chunks

onion
3-4
cloves
garlic

cup
mayonaise

tsp
lemon juice
Instructions
Preheat oven to 425 degrees.
Line a baking pan with
parchment paper
.
Place the mushrooms,pepper onion and garlic on the baking pan.
Drizzle with olive oil and sprinkle salt and pepper.
Bake for approximately thirty minutes or until vegetables are soft.
Allow to cool.
Place veg with remaining ingredients in a container and blend with a
hand blender
till smooth.
