Step-By-Step Directions

1. Bake and Freeze the Cheesecake

Pour the batter into a prepared baking pan. The height of the cheesecake, when baked should be approximately the same height as the cookie cutter. Place the cheesecake in the freezer until firm. This makes it much easier to cut clean circles without breaking.

2. Prepare the Chocolate Handles

Melt the chocolate and place it into a piping bag. You can even melt the chocolate directly in the bag for easier cleanup.

3. Pipe the Handles

Cut a very small hole in the corner of the piping bag. Pipe small handles onto parchment paper using either a backwards “C” shape or a question mark shape. The handles should be approximately the height of your cheesecake rounds.

4. Allow the Chocolate to Set

Let the chocolate handles dry completely until firm. You can refrigerate them to speed up the process.

5. Cut Out the Cheesecake Cups

Using a 2-inch deep round cookie cutter, cut circles out of the cheesecake to create your mini “coffee cups.”

6. Attach the Handles

Carefully insert the chocolate handles into the sides of the cheesecake rounds.

7. Toast the Marshmallows

Place mini marshmallows under the broiler for 30 seconds to 1 minute, watching carefully so they don’t burn.
