Looking for a summer dessert that’s as fun as it is delicious? This Ice Cream Sandwich Cake is the ultimate treat!
Easy to assemble and endlessly customizable, it’s a perfect make-ahead dessert for parties, summer birthdays, or any time you want to impress kids (and adults) with something playful and sweet.
We all know how much everyone loves ice cream cakes, yet we also know how pricey they tend to be. So here’s an idea that is very cost effective, practically effortless, delicious, and most of all, “we’ll all scream” for more!
Though this is a great cake for children’s birthdays, this practically “no mess preparation” ice cream cake is a “cool” dessert for any occasion. It literally takes minutes to create and is sure to be family favorite.
The base of the cake is ice cream sandwiches. You can decorate it as a fun birthday cake (see photos below) using edible spray, piping gel, sprinkles… or as an elegant dessert using flowers, caramel topping, nuts, chocolate shavings….
There are many great cake topper options you can purchase such as faux flowers, this happy birthday topper or this custom topper. These Hello Kitty cake toppers are cute for a little girl and construction cake toppers for a little boy. Of course there are endless candle options, just make sure they get blown out quickly so the cake doesn’t melt!
Supplies:
- 9 large ice cream sandwiches (1 ½ packages)
- 16 oz whip
- 4 Tbsp confectioners’ sugar
- piping bag and tips
- icing comb
- Choice of toppings and decorating supplies such as edible spray ,piping gel ,caramel sauce, sprinkles, nut brittle etc.

Directions:
- Place whip in the bowl of your electric mixer. Beat until stiff and then add confectioners’ sugar.
- Place three ice cream sandwiches side by side on a cake platter and repeat with another two layers.

3. Cover the entire top and sides of the cake with the whip. I like to use a metal spatula for this.
4. At this point, decorate the cake to fit your occasion.
For the flower cake:
- Cream the entire top and sides of the cake.
- Pipe all the sides and the top of the cake using a star tip (I used 6B).
- Decorate the top of the cake with faux flowers.
To make an edible spray paint cake (photo below):
- Run the icing comb across the four sides of the cake to add texture and design.
- Spray the sides of the cake with the edible spray paint.
- Prepare pastry bag with tip and fill with remaining whip and pipe all edges of the cake.
- Use the piping gel to write “Happy Birthday….”



Keep frozen till you are ready to serve.
