These Eye Catching Fruit Cups are gorgeous, delicious, refreshing and of course eye catching too!! The recipe for the fruit cups is pretty simple. We made a strawberry mixture made from strawberries and jello and topped it with different chopped fruit.
For an eye catching presentation at your next part, line them up in rows, each row topped with a different fruit topping. You can use any kind of chopped fruit. We used chopped mango, kiwi, blueberries and pomegranate.
The fruit cups can be made in any plastic cups as well. If you would like to use a covered container, these square acrylic boxes work very well.
You will need:

- strawberry mixture
-
- chopped fresh mango
-
- chopped kiwis
-
- blueberries
-
- pomegranateÂ

STRAWBERRY MIXTURE
Yields approximately 50-60 servings

- 5 lbs frozen strawberries, defrosted

- 5 packages raspberry or strawberry jello
(There is no water added to this recipe.)
Directions

- Place strawberries in a pot and blend with a hand blender.
- Bring to a boil.
- Remove from flame.
- Add jello and stir until thickened. Allow to cool.
- Fill cups approximately 2/3 of the way with strawberry mixture.
- Refrigerate till cold and firm.Â
- Add fruit and serve.                                                                    TIP- To prepare in advance, you can freeze cups of strawberry mixture. When ready to use, allow to defrost and then add the fresh fruit.
