A Baking Hack We’re Loving

We love a good baking hack, and this one is definitely a keeper. We  recently developed this idea and can’t believe how simple they are to make. It’s one of those shortcuts that feels just as satisfying as baking from scratch.

Store-Bought, But Made Better

We started with store-bought Lotus cookies and gave them a simple upgrade. By adding a pecan and coconut mixture, we transformed them into something truly special—no complicated baking required.

Small, Dainty, and Delicious

The added topping brings extra texture and flavor, turning these cookies into delicate, irresistible treats. They’re perfectly sized, beautifully finished, and taste like you spent way more time in the kitchen than you actually did.

These elevated cookies are ideal for Mishloach Manos, hosting, or anytime you want something homemade-looking without the work.

Lotus Pecan Cookies

Ingredients
  

  • 1 package lotus cookies (1.5 x 2”)
  • 1 1/4 cup chopped pecans
  • 1 1/4 cup coconut (sweetened)
  • 2 1/4 sticks margarine
  • 1 1/4 cup brown sugar

Instructions
 

  • Place the cookies on a parchment lined cookie sheet.
  • Boil the margarine, brown sugar, coconut and pecans in a medium size pot.
  • Place some of the mixture on each cookie
  • Bake at 350 degrees for 8 minutes.
  • Allow to cool.
  • Drizzle with chocolate
