We love a good baking hack, and this one is definitely a keeper. We recently developed this idea and can’t believe how simple they are to make. It’s one of those shortcuts that feels just as satisfying as baking from scratch.

We started with store-bought Lotus cookies and gave them a simple upgrade. By adding a pecan and coconut mixture, we transformed them into something truly special—no complicated baking required.

Lotus Pecan Cookies
Ingredients
- 1 package lotus cookies (1.5 x 2”)
- 1 1/4 cup chopped pecans
- 1 1/4 cup coconut (sweetened)
- 2 1/4 sticks margarine
- 1 1/4 cup brown sugar
Instructions
- Place the cookies on a parchment lined cookie sheet.
- Boil the margarine, brown sugar, coconut and pecans in a medium size pot.
- Place some of the mixture on each cookie
- Bake at 350 degrees for 8 minutes.
- Allow to cool.
- Drizzle with chocolate

You can use any size lotus cookie.
