One of my very first plate art articles in Family First, back in summer 2011 was a watermelon cake. The idea quickly gained popularity for it’s simplicity, healthy and refreshing dessert that can be used for any occasion.
It’s so nice to have a cake to serve people who are allergic, dieting or just want to eat healthy.

I decided to update it with these refreshing and eye catching watermelon log cakes. Presented here are four different logs with different fruits. The idea of multiple logs is nice for a party. If you only want to make one, you can make different sections on top of the log and place a different fruit in each part.Â

Sometimes it’s nice not to feel guilty about eating a slice of cake!
Supplies:Â
- 1 whole watermelon, oval shaped
- Kiwis
- Dragon fruit
- Blueberries
- Strawberries
- Rectangle plattersÂ
Directions:
- When choosing your watermelon, try to pick one that is oval-shaped.
- Using a sharp knife, cut off all sides of the watermelon, trying to keep as much flesh on as possible.
- Lay flat and continue to remove the rind with a sharp knife. For best results when removing rind, leave a thin layer of white flesh, and then remove the white layer while rounding out a perfect log.
- Decorate each log with one type of fruit or create rows with assorted fruit.

We actually used your idea and made these as individuals at a sheva brachos. They were 2″x4″x6″ logs at each place with half and half covered with different fruits. The tables absolutely popped! Thank you Esther!

It really depends how big the watermelon is and how large you want the logs to be.
