One of my very first plate art articles in Family First, back in summer 2011 was a watermelon cake. The idea quickly gained popularity for it’s simplicity, healthy and refreshing dessert that can be used for any occasion.

It’s so nice to have a cake to serve people who are allergic, dieting or just want to eat healthy.

 

I decided to update it with these refreshing and eye catching watermelon log cakes. Presented here are four different logs with different fruits. The idea of multiple logs is nice for a party. If you only want to make one, you can make different sections on top of the log and place a different fruit in each part. 

Sometimes it’s nice not to feel guilty about eating a slice of cake!

Supplies: 

  • 1 whole watermelon, oval shaped
  • Kiwis
  • Dragon fruit
  • Blueberries
  • Strawberries
  • Rectangle platters 

Directions:

  1. When choosing your watermelon, try to pick one that is oval-shaped.
  2. Using a sharp knife, cut off all sides of the watermelon, trying to keep as much flesh on as possible.
  3. Lay flat and continue to remove the rind with a sharp knife. For best results when removing rind, leave a thin layer of white flesh, and then remove the white layer while rounding out a perfect log.
  4. Decorate each log with one type of fruit or create rows with assorted fruit.

  1. We actually used your idea and made these as individuals at a sheva brachos. They were 2″x4″x6″ logs at each place with half and half covered with different fruits. The tables absolutely popped! Thank you Esther!
