Everyone always enjoys a good hot bowl of soup on a cold winter day. Soup is a great dish to serve at any occasion.
Here is a beautiful, healthy and simple way to garnish a bowl of soup using blue potatoes and carrots. Blue potatoes have special health benefits. They will retain their color after cooking as well.
Blue potato flowers look beautiful on cauliflower, butternut and yellow split pea soup.

For best results, make sure your soup is thick enough so that potatoes don’t sink.
What you will need:
- blue potatoes
- cooked carrot slices
Directions:
- Place blue potatoes in pot-cover with water and cook till soft enough to get a fork through-do not overcook.
- Cut 1/4 ” slices of potatoes and then cut each slice in half.
- Arrange you sliced potatoes to look like a flower.
