Trader Joe's Rainbow Salad

For years I have been trying (unsuccessfully) to convince the management of Trader Joe’s to open a store in my area. Well, until that happens, I’ll continue to benefit only from afar, as my mother-in-law always makes sure to bring along my favorite items from Trader Joe’s when she comse for a visit.
You don’t have to have an eye for color and design to realize how striking (and delicious) the produce they carry is. Take a look at the pictures, the colorful tomatoes and carrots are just breathtaking! With this easy recipe, you can have a healthy, delicious, and beautiful addition to any meal. Enjoy! (Of course non Trader Joe’s tomatoes and carrots work just fine with this simple and delicious recipe as well!)
Ingredients:
- 1 lb mini heirloom tomatoes
- 12 oz sugar snap peas
- 1 red,1 yellow,1 dark orange,1 light orange carrot-cut into thin sticks
- 1/2 purple onion-sliced
- 1 tsp salt
- 3 Tbsp oil
- 3 Tbsp sugar
- 4 Tbsp vinegar
Place all ingredients in a container and marinate 2-3 hours before serving.
