While it may be a bit tedious to make for a large crowd, creating one or two for the center of the table can be just the right touch of visual magic.


A Twist on the Classic Cheese Blintze

This idea is not just beautifulโ€”itโ€™s functional, too! You can serve it as a deconstructed cheese blintze by hiding a spoonful of cheese filling under the rolled blintze. It adds a little surprise and keeps with the dairy theme in a creative, unexpected way.

You will need:

  • leafy lettuce
  • fruit
  • crepe
  • cheese filling or Feta Cheese (optional)
  • ribbon

You can use any crepe recipe but the trick is to make the crepes thin. We used a sweet crepe recipe from Simply Gourmet and used a 10โ€ frying pan.

Directions:

  1. Lay the crepe on a flat surface.
  2. Bring up the center of the bottom part of the crepe to form a pleat.
  3. Pinch up the two sides of the crepe to the center to form the bottom of the bouquet.
  4. Arrange the Salad in the bouquet. To spread out the top of the bouquet, you can slit the top of the crepe before filling the area with salad.
  5. Tie a bow around the crepe.
