Peach Cookies
Ingredients
Cookies:
- 3 sticks margarine
- 1 cup confectioners sugar
- 3 cup flour
- 1 tsp baking powder
- ½ cup cornstarch
- 1 tsp vanilla
For Decorating:
- peach jelly
- red edible spray paint
- granulated sugar
- mint or silk leaves
Instructions
Cookies
- Place all the dough ingredients in the bowl of your mixer. Mix until a dough forms.Refrigerate dough for at least 1 hr.
- Preheat oven to 350 degrees and line two baking sheets with parchment paper.
- Take a small amount of dough in your hands, and roll into a ball (about 1 1/2 inches for large, 3/4 of an inch for the small-sized cookies). Place balls on the baking sheets and flatten them slightly.
- Spray cookies lightly with the edible spray. You can either do one even spray or make a couple of small “blotches” on each cookie to resemble a real peach.
- Continue to roll out all of the dough into balls, and then bake for about 12-15 minutes or until very light brown on the bottom.
- Dip the tops and sides of the cookies in granulated sugar as soon as they come out of the oven.
- Allow to Cool
Decorating:
- Form a “peach” by sticking 2 cookies together with the jelly.
- Stick a leaf in and your peach cookie is now complete.
