Trader Joe’s Rainbow Salad

Some of my favorite products at Trader Joe’s are rainbow carrots, sugar snap peas and heirloom tomatoes.

When you start off a salad with rainbow carrots you’re off to a bright start! We can never get over the beauty of rainbow carrots. Each carrot isĀ  unique and different. You never know what exactly the carrot will look like inside to you actually cut it open.

Rainbow salad is one of our favorite salads. It’s one of those recipes that you don’t need to follow exactly. You can add or leave out whichever vegetables you want. Especially becauseĀ  this salad is marinated, you can literally used whichever vegetables are left in your vegetable bin. Some other vegetables we like using in our Rainbow Salad are baby corn, broccoli, cauliflower, and sliced zuchinni.Ā Ā 

Trader Joe's Rainbow Salad

Ingredients
  

  • 1 lb Mini Heirloom Tomatoes
  • `12 oz Sugar Snap Peas
  • 1 Red, 1 Yellow, 1 Dark Orange, 1 Light Orange Carrot cut into thin sticks
  • ½ Purple Onion sliced
  • 1 tsp Salt
  • 3 Tbsp Oil
  • 3 Tbsp Sugar
  • 4 Tbsp Vinegar

Notes

Place all ingredients in a container and marinateĀ 2-3 hours before serving.
