Leek is one of the traditional Rosh Hashanah simanim (symbolic foods), and this year we came up with a new, simple, and really delicious way to incorporate it into the meal.

We took our simple, classic salt-and-pepper lokshen kugel and added sautéed leeks for a flavorful twist that works perfectly for Rosh Hashanah.

Salt & Pepper Leek-Shen Kugel
Ingredients
- 2 10 oz bags medium egg noodles (We used Weinstock's Heimish Noodles)
- 2 large leeks
- 1/2-3/4 Cup oil
- 6 xl eggs
- 1 Tbsp salt
- 1 Tsp black pepper
Instructions
- Prepare the leeks: Remove and discard the green part of the leek. Check the white part of the leek according to your LOR. then slice it thinly.
- Sauté the leeks: Heat the oil in a frying pan over medium heat. Add the leek and sauté until softened and slightly golden. Remove from the heat and allow to cool.
- Cook the noodles according to the package directions. Drain well.
- Make the kugel mixture: In a large bowl, combine the cooked noodles, eggs, salt, pepper, sautéed leek, and oil. Mix until well combined.Optional: Reserve a small amount of the sautéed leek and sprinkle it over the top of the kugel before serving.
- Divide the mixture among 18 muffin cups or 2 small tube pans.
- Bake at 350°F for 30–45 minutes, or until the kugel is golden and set.
