Note on Ingredients:

This recipe calls for lightly salted almonds. If they are not available or if you prefer, you can roast and salt the almonds on your own. According to the Star K, any raw nuts without any additives are permitted to use on Passover. We usually buy the large bags of Kirkland raw almonds and roast and salt them on our own. 

You can use light or dark brown sugar.

Passover Chocolate Nut Clusters

Pesach Nut Clusters

Servings 20 clusters

Ingredients
  

  • 1 lb. slightly salted almonds
  • 1 cup brown sugar
  • ½ cup honey
  • 1 stick margarine
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp vanilla extract
  • 1 lb. semi sweet chocolate

Instructions
 

  • Place the brown sugar, honey, margarine and salt in a medium size pot over a small-medium flame and bring to a boil.
  • Let mixture boil exactly 5 minutes without stirring.
  • Add the vanilla and baking soda.
  • Mix well and add in the almonds.
  • Prepare 2 baking pans with heavy duty foil.
  • Using a metal spoon, drop small clusters on the heavy duty foil.
  • Freeze till firm.
  • Melt the chocolate over a double boiler or microwave.
  • Dip just the bottom or the entire cluster into the chocolate and refrigerate.
